The 30 day FRUIT CHALLENGE with Dole is coming to an end and I would love to give you a little summary as well as more information about fruit to keep you inspired ♥︎ (German version below!)

As you all know fruit plays an important role in my life. Over four years ago I adopted a vegan diet with a high amount of fruit. I made the switch after experiencing several different health problems after going off the pill one year prior. I had developed hypothyroidism, my liver levels were crazy high, my face was full of acne breakouts and I had gained quite a lot of weight. After unsuccessfully trying out many different things, diets and protocols to heal my body I came across this lifestyle as a possible cure. I did more research and decided to go vegan – I excluded all animal products and most processed foods from my diet and started incorporating a lot more whole foods and especially fruits. Within the first few weeks I already noticed changes: my energy levels were higher, my digestion improved and I started feeling so much better in my body.

PBJ Pancakes (vegan & healthy!)

Ahh how much I love preparing food for other people! And especially when I can surprise them with how delicious and satisfying a healthy plantbased recipes can taste.

After over 3.5 years of being vegan I sometimes can’t believe that so many people still think this diet is restrictive and you basically chew on celery sticks all day. Far from! You can enjoy healthy but delicious vegan meals without missing out on anything. And honestly guys, I’m not the type of person that stands in the kitchen for hours, creating recipes with 76439 ingredients. All my meals are quite simple and I never weigh or measure anything!

So my friend Linda is staying with me at the moment and today I decided to make some vegan pancakes for her.

True beauty comes from within. That’s nothing new – yet we get swept away by all these expectations we place on ourselves to look a certain way and fit society’s beauty standards. We spend so much energy focusing on superficial things, failing to actually take care of our inner self. But only when we say YES to ourselves – in every possible aspect, when we cultivate that self love, only then we can shine from within.

Brownie Ice Cream Dream

Today I am sharing with you the brownie nicecream recipe I created a few weeks ago. This is an absolute DREAM for every chocolate lover and will not only satisfy any sweet craving but also basically take you to food heaven. I promise! It’s absolutely simple to make, totally healthy and guilt free but so delectable that it can easily compete with every dairy ice cream.

And if you ask me, it’s 100 times better because a) it’s so healthy that you can actually enjoy a huge bowl of it without fearing stomach pain or feeling heavy afterwards, b) it’s raw vegan made with only wholesome nutritious ingredients that are good for your body and c) it proves once again that nobody needs refined sugar or animal products to create a delicious dessert – well or breakfast, whenever you crave something chocolaty.

Christmas Brownies

It’s December, the month of love ♥

I am actually really getting into Christmas mood these days, looking forward to cozy afternoons with my family, snuggling up with some tea and a good book – and of course preparing delicious Christmas inspired dishes.
