It’s December, the month of love ♥
I am actually really getting into Christmas mood these days, looking forward to cozy afternoons with my family, snuggling up with some tea and a good book – and of course preparing delicious Christmas inspired dishes.
I am a big fan of all kinds of sweet treats and I love trying out new ways of preparing them with healthy plant based ingredients.
So today I am sharing my recipe for Christmassy Sweet Potato Brownies with you!
Brownies made with sweet potatoes?! Yes, I know, sounds weird at first but honestly guys this recipe is just so delicious. They are so chocolatey and with cinnamon, nutmeg and co. they honestly taste like Christmas in a bite. I promise you will love these and just making them is bringing you in advent spirit – my apartment still smells so heavenly.
And the best is, you can eat as much of them as you want as they are vegan, high in healthy carbohydrates, low in fat and full of good stuff! Sweet potatoes are a real superfood in my opinion, loaded with fibre, antioxidants and anti-inflammatories.
These brownies are totally healthy, free of any nasties, you can keep them super low fat and gluten free if you want. They are gooie, moist but still crunchy, sweet and perfect to share them with your family on advent Sundays or even for dessert on Christmas Day.
- 2 medium sized sweet potatoes
- 12 medjool dates
- 4 soft dried figs
- 1/2 cup buckwheat flakes or flour
- 1 cup oats
- 3 tbsp agave syrup (you can use maple syrup or coconut sugar as well)
- 4 tbsp raw cacao powder
- 2 tsp cinnamon
- 1 tsp christmas spice powder (cinnamon, orange peel, cloves, cardamom, nutmeg)
- opt. 1/2 tbsp Chocolate Lover mix by Your Superfoods
- toppings of your choice (I used walnuts, goji berries and sesame seeds)
Pre-heat your oven to 200 degrees. Peel and cut the sweet potatoes. Put them into a pot with a some water and steam until they are super soft (takes about 20 mins). Place the pitted dates, figs and sweet potatoes into your blender or food processor and blend until smooth. Please do yourself a favour and try this. Yep, I know… You are welcome.
In a bowl mix together all the dry ingredients, then add the sweet potato-fruit mixture and agave syrup and combine everything with a spoon or spatula. For a less crunchy texture blend the oats and buckwheat flakes first in the clean dry blender.
If you want to keep the brownies gluten free you can use gf oats, buckwheat flour, almond flour or any other gluten free flour of your choice.
Put the batter into a baking form on parchment paper and top with whatever you like.
If you want to use dried fruit like goji berries or cranberries it is better to add them after the brownies are done baking because they would get burned otherwise.
Put them in the oven and bake for 20 to 25 mins. When they are done let them cool down before you slice them. I store mine in the fridge, they taste even better when they are a bit chilled!
Little tip: Spread some almond butter on top, it basically takes you to food heaven! ♥
